The Forest City Summit recently featured an article on making maple syrup. Mitchell and Jackson Price, grandsons of the innkeeper, Carolyn Price, are being taught by their grandfather how to collect sap and make maple syrup. While innkeeper Price has 9 recipes featured in The Iowa Bed and Breakfast Association has a new cookbook "Discover Iowa:Cooking with Iowa Wines, Meats and other Products." She wants readers to know about a recipe from Andy Bean, innkeeper of Camp Bean Bed and Breakfast. It uses maple syrup in the recipe.
Blueberry Cream Cheese French Toast
12 slices of day-old bread, cubed
16 ounces cream cheese, cubed
1 cup fresh or frozen blueberries or peaches
12 eggs (we prefer Iowa eggs!)
2 cups milk
1/3 cup maple syrup
Sauce
1 cup of sugar
2 tablespoons cornstarch
1 cup water
1 cup fruit
1 tablespoon butter
Place half the bread cubes in a greased 9x13 pan. Sprinkle cream cheese cubes on top, then add one cup of fruit and the remaining bread. In a large bowl combine eggs, milk, and syrup. Pour over the top of the pan mixture. Cover pan and refrigerate overnight or 8 hours. Remove from refrigerator and let set 30 minutes. Cover with foil and bake at 325 for 30 minutes. Then uncover and bake an additional 30 minutes or until the center is set. Remove from oven and let set 10 minutes while you create the sauce.
Make your sauce by combining sugar, cornstarch, and water in small saucepan. Bring to a boil over medium heat. Cook, while continuously stirring for 3 minutes. Then stir in 1 cup of the fruit of your choice. Reduce heat and simmer 8-10 minutes. Stir in butter. Slice your pan into 12 pieces. Put a piece on the plate and spoon sauce over it. Serves 8-12.
